Espresso Doughnut Bites


It’s so easy to make Dad a special Father’s Day treat with this delightful Espresso Doughnut Bites recipe.

Espresso Doughnut Bites Ingredients

1 teaspoon instant dried yeast

1 1/2 tablespoons warm water

1/2 cup caster sugar

2 cups plain flour, plus extra for dusting

50g butter, melted

2 shots (60ml) espresso coffee

1 tablespoon milk

1 egg, lightly beaten

Vegetable oil, for shallow frying

Espresso Mascarpone Filling

250g mascarpone

3 teaspoons espresso coffee, cooled

Espresso Doughnut Bites Method

1) Whisk yeast with warm water and 1 teaspoon sugar in a small jug until yeast is dissolved. Set aside in a warm place for 5 minutes or until mixture is frothy.

2) Combine flour, 1/4 cup remaining sugar and a pinch of salt in a large bowl. Make a well. Add yeast mixture, butter, espresso, milk and egg. Mix until a soft, sticky dough forms. Turn out onto a lightly floured surface. Knead for 2 minutes to form a smooth ball. Place in a lightly oiled bowl. Cover with lightly greased plastic wrap. Stand in a warm place for 1 1/2 hours or until doubled in size.

3) Line 2 baking trays with baking paper. Punch dough down. Turn out onto a floured surface (add a little extra flour to surface if necessary). Knead for 2 minutes. Cut dough into 4 portions. Roll each portion into a 14cm log. Cut each log into 7 pieces. Roll into balls. Place on prepared trays. Stand for 20 minutes.

4) Make Espresso Mascarpone Filling. Place mascarpone and espresso in a medium bowl. Stir until just combined (don’t over mix). Spoon into a piping bag fitted with a 7mm plain piping nozzle.

5) Place remaining sugar in a bowl. Pour oil into a large, deep frying pan until 1/3 full. Heat over medium-high heat.

6) Cook doughnuts, in batches, for 1 to 2 minutes each side or until golden and puffed. Using a slotted spoon, transfer to a tray lined with paper towel to drain for 10 seconds. Pierce doughnuts with a knife. Stand for 5 minutes. Fill with mascarpone mixture. Toss in sugar to coat. Place on a plate. Serve warm or at room temperature.
