Simply scrumptious, these melt-in-your-mouth caramel biscuits are an indulgent treat to leave for Santa on Christmas Eve. For a ‘heartfelt’ gift, package a freshly-baked batch in one of our gorgeous cookie jars or gift boxes or display on a festive cake stand. Mmmm…merry Christmas!

Salted Caramel Biscuit Hearts

Preparation time: 30 mins
Cooking time: 10 mins
Makes about 16 single biscuits – 8 sandwiched biscuits

125g butter, softened
½ cup firmly packed brown sugar
2 Tbsp golden syrup
1 ½ cups plain flour
½ cup caramel top ‘n’ fill (Nestle)
½ tsp sea salt flakes
2 Tbsp icing sugar

1. Using an electric beater, beat butter, sugar and golden syrup in the small bowl of beater until light and creamy. Stir in sifted flour. Turn dough onto a lightly floured surface and knead until smooth. Form dough into a 3cm thick disc. Wrap in plastic film and transfer to refrigerator for 30 minutes or until firm.

2. Preheat oven to 180C. Line 2 oven trays with baking paper. Roll dough out between 2 sheets of baking paper until 3mm thick. Using a heart biscuit cutter, cut 16 biscuits from dough. Using a small heart cutter, cut the centre out of 8 biscuits. Place whole biscuits onto 1 baking tray and remaining biscuits onto other tray. Bake whole biscuits for 10 minutes or until light golden and cut out biscuits for 8 minutes. Transfer biscuits to a wire rack to cool.

3. Place whole hearts onto a flat surface. Combine caramel and sea salt flakes. Stir until combined. Spread mixture onto whole heart biscuits. Dust cut out biscuits with icing sugar. Place over caramel topped biscuits. Serve.
