Sticky Maple Roast Pork
Whether it’s a special occasion or simply a relaxing Sunday night in, this Sticky Maple Roast Pork recipe will be a hit with everyone that’s gathered around the dining table!

Sticky Maple Roast Pork Ingredients
1.5kg pork neck (scotch)
1 pink lady apple, cored
8 large sage leaves
2 brown onion, thickly sliced
1/2 cup maple syrup
500g chat potato, halved
2 baby fennel, trimmed, sliced (fronds reserved)
Steamed broccolini, to serve

Sticky Maple Roast Pork Method
1) Preheat oven to 150°C/130°C fan-forced. Line a roasting pan with baking paper.
2) Cut 8 x 3cm-deep slices (about 2cm apart) across top of pork. Cut apple into 16 thin wedges (discard any remaining apple). Place 2 pieces of apple, skin-side up, and 1 sage leaf into each slit.
3) Arrange onion over the centre of prepared pan. Place pork, cut side up, on top. Drizzle half the maple syrup all over pork. Season with salt and pepper. Bake, turning pork and brushing with remaining maple syrup every hour, for 3 hours or until pork is tender, adding potatoes and fennel halfway through cooking. Remove and discard onion from pan.
4) Serve pork with fennel, potatoes, broccolini and sprinkle with fennel fronds.
