Tiramisu Granita

Tiramisu Granita Ingredients
1 1/2 cups cold espresso coffee
1/2 cup caster sugar
2 tablespoons coffee flavoured liqueur
1/3 cup mascarpone
1/2 cup thickened cream
1/2 teaspoon cocoa powder

Tiramisu Granita Method
1) Combine 1 cup coffee, 1/3 cup sugar and liqueur in a jug. Pour into a 6cm-deep, 9cm x 19cm (base) loaf pan. Cover. Freeze for 30 minutes. Using a fork, flake mixture to break up ice crystals starting to form.
2) Freeze for a further for 3 hours, flaking mixture every 30 minutes, or until completely frozen.
3) Place remaining coffee and sugar in a small saucepan over medium heat. Cook, stirring, for 3 minutes or until sugar dissolves. Bring to a simmer. Simmer until slightly thickened. Set aside to cool.
4) Place mascarpone and cream in a bowl. Whisk until just-soft peaks form (don’t over whisk).
5) Spoon granita into glasses. Dollop with mascarpone mixture. Dust with cocoa. Drizzle with coffee syrup. Serve immediately.
